Crab cakes on open-face English muffins with cheddar cheese and red pepper remoulade, pommes frites
-Preparation:
Two crab cakes, which are:
2, 2.5 oz portions of crab are FORMED together with scallions, tomato concasse (peeled, seeded and chopped tomatoes) and flat leaf parsley, PRESSED in bread crumbs and then PAN-SEARED
are placed on top open-faced English muffins, with MELTED cheddar cheese
and
red pepper remoulade which is a PUREE of:
roasted red peppers
bread crumbs SOAKED in milk
salt and pepper
-Served: HOT on a large plate with pommes frites/house ketchup
