SHORT RIBS

Lean pork ribs, buttermilk mashed potatoes, spicy cabbage slaw, house made BBQ sauce-

-Preparation:

Lean pork ribs are MASSAGED, PAN-SEARED, and SLOW-BRAISED (meaning in a covered pan with liquid, where the steam from the liquid cooks the ribs); they SEASONED with salt and pepper, garlic powder, Cajun spice, and COATED in house made BBQ sauce (Sweet Baby Rays & hoisin sauce)

Sides:
     *SPICY CABBAGE SLAW
          PUREED chipotle
          Red and white cabbage
          TOSSED with sesame oil and rice wine vinegar
           SEASONED with salt and pepper

     *BUTTERMILK MASHED POTATOES

-Served: HOT on a large plate
