-Preparation:
THREE Black Vietnamese Tiger Prawns are briefly POACHED in
Pickling spice (FYI can include allspice, bay leaves, cardamom, cinnamon, cloves, coriander, ginger, mustard seeds)
White wine
Peppercorn then, CHILLED over ice.
-Served:
COLD over ice in a glass with a ramekin of cocktail sauce and lemon wedges.
